There is nothing nicer than a warm spicy chilli on a winters day. Its simple to make and can be used with a wide variety of side dishes such as rice, nachos, wraps, wedges, jackets or plain old chips. Here is my version ...
Serves 6
Ingredients
3-4 Garlic cloves chopped
Lean Beef Mince 450g
4 x tinned tomatoes (chopped)
1 tsp tomato puree
1 tsp honey
Hot chilli powder (to taste)
1 red chilli
1 red pepper
6 mushrooms - any variety chopped
6 vine tomatoes - chopped (or any variety)
1 onion - chopped
handfull of chopped corriander fresh
quarter bag of frozen veg (brocolli, carrot, peas, etc)
Sea Salt and Black Pepper
1 tsp olive oil
Method
1. Fry the mince, beef, onion, garlic in one tsp of olive oil. Drain off the fat and then cook until browned nicely.
2. Get a giant saucepan add all the other ingredients and heat until it nearly boils the tomato juice and then turn down to a simmer and add the frying pan ingredients.
3. Keep stirring the chilli until it reduces sufficiently
4. Sit back and smile at how easy this cooking lark is :)
Remember if you make too much this freezes a treat - if you use the foil packs you can cook it straight from frozen in the oven - takes around 45 mins on 180-200c - great after a hard days work as an easy option.
